Honey Mustard Pork Tenderloin

In case you didn't know, Kroger.com has some wonderful recipes and most of them are diet-friendly. For those recipes that aren't, with a little tweaking you can turn them into a great low-calorie/low-fat meal. I tried a new one tonight - Honey Mustard Pork Tenderloin - and the whole family loved it, including me. I served mine with mashed potatoes and green beans. Yum-O!

Ingredients
1 pound pork tenderloin
4 Tbs honey
2 Tbs cider vinegar
2 Tbs brown sugar
1 Tbs Dijon-style mustard

Directions
Combine all ingredients but tenderloin and mix well. Coat tenderloin well with sauce. Bake in 375 degree oven for 20-30 minutes, basting occasionally, until meat thermometer registers 160 degrees. Slice thinly to serve.
