Ingredients:
- 1 pound ground sirloin
- 1 onion, chopped
- 1 tsp minced garlic
- 1 can tomato sauce (15 ounces)
- 1 can chopped tomatoes (15 ounces)
- 4 cups water
- Salt and pepper to taste
- 1 tbsp Worcestershire sauce
- 1 bay leaf
- 1 cup sliced, peeled carrots (in rings)
- 1 can corn niblets, drained (11 ounces)
- 1/3 cup rice, uncooked
Directions: In a large nonstick skillet, cook the meat, onion and garlic until the meat is done. Drain any excess liquid. Add the tomato sauce, tomatoes, water, salt, pepper, Worcestershire sauce, bay leaf and carrots. Bring to a boil, lower heat and cook for 10 minutes. Add the corn and rice and continue cooking over medium heat until the rice is done and the carrots are tender, about 30 to 40 minutes. Add more water if it's too thick. Serve. Makes 8 servings
